Emma: It’s called okonomiyaki. Have you heard of it?

Emma: It’s like a Japanese savory pancake. It’s very popular, especially in Osaka.
Alex: A pancake? But not sweet?
Emma: Right. It’s made with flour, eggs, cabbage, and water. That’s the base.
Alex: Cabbage in a pancake? That’s new to me! Then what do you do?
Emma: Next, I add pork or shrimp and cook it on a hot pan.
Alex: Okay, sounds interesting.
Emma: I flip it and cook both sides until golden. Then I add sauce, mayo, seaweed, and bonito flakes on top.
Alex: Bonito flakes? What are those?
Emma: They’re thin dried fish flakes. When you put them on top, they move from the heat.
Alex: That’s crazy but kind of cool!
Emma: Yeah, everyone is surprised the first time. But they’re really tasty too.
Alex: That’d be great. I’ll try making it this weekend.
